School is back in session, friends, and I couldn’t be more excited!

Every day is full of possibilities. The sun is shining. The birds are chirping. I have this incredible feeling of weightlessness, which can only be attributed to the fact that I don’t have a toddler hanging on my leg asking for fruit snacks.

The world has opened itself to all kinds of possibilities. Lunch with a friend? Don’t mind if I do.

A little light browsing at the mall? I don’t see why not.

Late morning spin classes? Obviously not, but it’s nice to know I have choices, is all. I’m a woman with choices. A weightless woman with choices. June, what? I’m in denial of it’s existence. I just don’t think I can ever go back, you guys. Please don’t make me.

With a new school year comes a whole new Responsible Me. And can I just say, I LOVE Responsible Me? Responsible Me has meals planned weeks in advance. Responsible me has dinner ready at 5:30, unlike Summer me, who was throwing hot dogs on the grill at 9:30. Responsible me packs lunches the night before, complete with organic carrot sticks and smiley face notes. Responsible me even updates the family command center calendar. What are we doing three Thursdays from now? Hang on and I’ll go look. No big deal, it’s just how Responsible Me rolls.

There is…however…one area that Responsible Me still can’t seem to master.

Breakfast.

I hate mornings. I don’t want it to be so, but the planets seems to have conspired to align in such a way that makes getting up impossible. I’m grouchy, I hate coffee, and there’s people scurrying around my house asking all the questions about socks and signing papers and things. Why are mornings so needy? It’s really not fair.

In the interest of being a fantastic mom (which despite my failings, I still pride myself on), I decided that Responsible Me should take care of breakfast so that Grumpy Morning Me doesn’t have to. Enter: Pancake Breakfast Muffins.

These little guys couldn’t be simpler — I grab my Bisquick, whip up some pancake batter by adding two eggs and a cup of milk, and stir in cooked sausage, bacon, or in this case, Hormel Canadian Bacon.

As an aside, Bisquick is a staple in my house — I use it for biscuits, my favorite chicken and dumplings recipe, waffles, and…pancakes. I always have a giant box on hand and it always comes in handy! I also love having Canadian bacon around — it’s great for throwing a quick English muffin sandwich together. Hormel Black Label Canadian bacon is my favorite by far, simply because it’s cut nice and thick and tastes great!

Make sure you finely dice your Canadian bacon and fry it before putting in the pancake batter. It’ll help cook out some of the moisture and keep it from sinking to the bottom of the muffins.

Fill the muffin tins 2/3 full, bake at 375 until done, and you’ve got 12 hearty, filling Pancake Breakfast Muffins!

I like to throw some in the freezer to thaw on busy mornings. Heat, slather with butter, and dip in syrup. Jon David loves to grab one to eat on his way to school!

Yes, please. I’ll take four.

Pancake Breakfast Muffins

Ingredients

  • 6 oz Hormel Black Label Canadian Bacon, diced finely
  • 2 cups Bisquick pancake and baking mix
  • 2 large eggs
  • 1 cup milk

Instructions

  1. Spray a large frying pan with nonstick cooking spray. Over medium heat, lightly brown diced Canadian bacon. Place on paper towels to cool.
  2. Preheat oven to 375. Line 12 muffin tins with cupcake liners.
  3. In a large bowl, combine Bisquick pancake and baking mix, eggs, and milk. Stir until just mixed -- mixture may have some lumps. Fold in cooled Canadian bacon pieces.
  4. Fill prepared muffin tins 2/3 full. Bake for 15 - 20 minutes or until a toothpick inserted in the center comes out clean. Serve warm with butter, or cool to room temperature and freeze for later.
